Best piece of advice you ever got about cooking: Be patient.

If you could only eat one meal forever, it would be: Raw oysters, lemon, white wine.

Favorite food: Onigiri.

Recommended reading: A Room of One’s Own by Virginia Woolf. In Praise of Shadows by Jun'ichirō Tanizaki. Currently reading, have not finished, but do recommend Thinking Fast and Slow by Daniel Kahneman.

Best meals: Barbecue in Vietnam. In Barcelona, dinner at Iposa with my love. My dad's chao ga. Thai basil, mango, and avocado from my childhood backyard. Spam musubi at the beach.

Food you’d like to try: This is not something I think about, really, but it would probably be any dish created for Noma: sorrel leaf and cricket paste, cabbage and live ants, botan ebi and flavors of Nagano Forest, etc.
